Minced Beef Lettuce Wraps

INGREDIENTS:

Serves 2 - 4

  • 500g Lean mince, free range organic

  • 2 Carrots, grated

  • 1 Zucchini, grated

  • 1 Capsicum, chopped

  • 2 cloves Garlic chopped

  • 1 handful Oregano,

  • 1 handful Basil

  • 1 handful Parsley, chopped

  • 2 tbsps Olive oil

  • Pumpkin seeds for added zinc ☺

  • Pinch of Celtic sea salt

 

INSTRUCTIONS:

  1. Cook mince in olive oil with garlic. 

  2. Once meat is almost browned add the rest of the ingredients.

  3. Cook for another 10 minutes.

  4. Serve in lettuce cups and dress with pumpkin seeds.
